Cá - Món ngon bổ từ miệng đến đuôi

(Dân trí) - Cá không những giàu dinh dưỡng mà còn dễ tiêu hóa. Tuy nhiên, mỗi bộ phận của cá có những giá trị dinh dưỡng như thế nào? Cách ăn ra sao thì chưa hẳn ai cũng biết.

Thịt cá

Thịt cá hàm chứa phong phú protit ưu chất, dễ tiêu hóa hấp thụ, hàm lượng chất béo thấp, ngoài ra còn có can-xi, phốt-pho, kẽm, i-ốt, ma-giê, muối vô cơ và cả vitamin A, D và B. Thịt cá chia ra hai phần thịt trắng và sậm màu. Phần thịt sậm màu giàu chất béo, đường nguyên chất, vitamin, các loại chất xúc tác nên có vị tanh. Thịt màu trắng thì có ít mùi tanh hơn.

Đầu cá

Não cá hàm chứa phong phú acid béo không bão hòa DHA, còn có các loại chất béo, phốt-pho có lợi ích giúp cho não của trẻ em phát triển, có tác dụng nhất định trong việc phụ giúp trị liệu các chứng quên ở người già. Tuy nhiên hàm lượng cholesterol trong não cá khá cao vì thế không nên ăn nhiều.

Bong bóng cá

Bong bóng cá được mệnh danh là “ nhân sâm dưới biển”, được xếp ngang hàng cùng với tổ yến, vây cá mập. Bong bóng cá hàm chứa protit keo nguyên chất đại phân tử vi sinh, giúp cải thiện các tế bào, thúc đẩy sinh trưởng phát triển, làm chậm da lão hóa, là thực phẩm lý tưởng có chất béo thấp, protit cao. Thành bong bóng của cá biển khá dày, thông thường được chế biến thành sản phẩm khô.

Vẩy cá

Vẩy cá hàm chứa kiềm mật có thể tăng cường sức đề kháng, còn hàm chứa nhiều loại axit béo không bão hòa, có tác dụng nhất định trong việc chữa trị xơ cứng động mạch, cao huyết áp và bệnh tim mạch. Ngoài ra, một số loài cá không cần cạo vẩy khi hấp nấu, ví dụ như vẩy vá chạch biển hàm chứa 6 loại purine có thể chống ung thư vì không nên bỏ vẩy khi chế biến.

Đuôi cá và xương cá

Dinh dưỡng ở đuôi cá tương đương với thịt ở thân cá. Xương cá địch thực có tác dụng bổ sung can-xi, nhưng chúng ta thông thường ít ăn xương cá.

Miệng cá

Thành phần chủ yếu ở miệng cá là protit keo nguyên chất, mặc dù nó thuộc một trong 8 loại sơn hào hải vị nhưng thực tế không có nhiều dinh dưỡng.

Mắt cá

Hàm chứa vitamin B1 và DHA khá cao, nhưng do mắt cá bé cho nên giá trị dinh dưỡng không lớn.
