Để bé ăn dặm ngon miệng…

Việc khó khăn nhất đối với các bà mẹ cho con ăn dặm đó là bé biếng ăn, không ăn được thức ăn đặc, phải ăn một số lượng lớn.

Những bữa ăn dặm đầu tiên thật khó khăn đối mẹ và bé. Nhiều bé không quen ăn thức ăn đặc (do 6 tháng đầu chỉ bú mẹ, thức ăn lỏng hoàn toàn) nên thường nôn ói. Còn mẹ thì lúng túng không biết nấu bột thế nào để bé ngon miệng, đủ chất.

Những nguyên tắc quan trọng

- Ăn lừ lỏng tới đặc (độ đặc nên bắt đầu từ 10%)

- Ăn từ ít đến nhiều: Ở lần đầu tiên, cho bé nếm 1-2 thìa loãng rồi cho bú là chính. Nếu bé chịu ăn, không ói ọc, không sình bụng, không bị tiêu chảy thì có thể tăng dần. Ngược lại, nên tạm ngưng 1-2 tuần rồi mới tập ăn trở lại với lượng thức ăn ít và loãng hơn.

- Tập cho bé quen dần với các thức ăn mới: theo dõi khả năng hấp thu của bé với loại thức ăn mới này trong vòng 5-7 ngày rồi mới cho ăn tiếp món mới.

- Thức ăn phải lỏng mềm, dễ nuốt, phù hợp với từng tháng tuổi của trẻ.

- Phải đảm bữa ăn đầy đủ 4 nhóm chất dinh dưỡng: chất đạm (thịt, cá, tôm, cua, trứng, sữa , đậu đỗ, vừng….), chất bột đường (gạo, mỳ, khoai, ngô), chất béo (dầu, mỡ, lạc, vừng), vitamin và khoáng chất (rau có màu xanh thẫm và các loại quả màu vàng đỏ).

- Đảm bảo VSATTP trong chế biến thức ăn (thực phẩm tươi ngon, an toàn, dụng cụ chế biến và tay người chế biến phải sạch sẽ).

Khi bắt đầu ăn bổ sung, nên giã nhỏ, xay nhuyễn và ninh nấu kỹ để món ăn nhừ, trẻ có thể ăn được cả cái, thay vì chỉ ăn nước.

Tuy nhiên, không phải ngẫu nhiên nhiều bà mẹ áp dụng cách bổ sung bột giàu men phân giải hoặc nhai thức ăn trước khi cho trẻ ăn, hoặc dùng các enzym trong hạt nảy mầm như giá đỗ, mầm lúa… để hóa lỏng tinh bột, giúp trẻ ngon miệng (nhờ vị ngọt tự nhiên được tạo ra trong quá trình hóa lỏng tinh bột)), dễ hấp thu tinh bột hơn khi hoạt động phân giải tinh bột của tuyến tụy men Amylase ở trẻ dưới 2 tuổi còn kém. Tuy nhiên, bổ sung men phân giải thế nào cho hợp lý, nhai thức ăn thế nào cho đảm bảo vệ sinh lại không phải là chuyện đơn giản và càng không thể cho gia vị tạo độ ngọt mềm để làm tăng vị giác của trẻ...

Vì thế, một cách mới, hiện đại, giản tiện, đảm bảo độ lỏng mềm, dễ nuốt, lại vẫn đảm bảo đủ đậm độ các chất dinh dưỡng trong mỗi bữa ăn là phương pháp thuỷ phân tinh bột bằng men (Cereals Hydrolysed Enzymatically hay gọi tắt là công nghệ CHE).

CHE sẽ cắt các chuỗi tinh bột thành các phân tử đường có cấu trúc nhỏ hơn, từ đó giúp bột có độ mịn hơn, giảm độ đặc và tăng lượng calo trong thức ăn, giúp bé hấp thụ được lượng calo cần thiết với khẩu phần ăn tiêu chuẩn. Khi đó, bé chỉ phải ăn một lượng ít hơn những vẫn đảm bảo đủ các chất dinh dưỡng và nhu cầu năng lượng. Điều này, đặc biệt phù hợp với những bé biếng ăn hoặc mới ốm dậy, cần nhu cầu năng lượng cao hơn nhưng lại không ăn được nhiều.

Ngoài ra, phương pháp CHE cũng giúp tạo cho món ăn vị ngọt tự nhiên, không cần phải thêm đường. Điều này đặc biệt quan trọng đối với các sản phẩm dành cho các giai đoạn đầu phát triển của trẻ.

Như vậy, khi bé ăn dặm, ngoài việc tự nấu bột và cháo xay cho bé, nhất là các bữa ăn dặm đầu tiên các bà mẹ có thể cho bé ăn bột có dùng phương pháp thủy phân tinh bột bằng men (CHE) của các hãng có uy tín trên thị trường, sẽ giúp bé ăn bột dễ dàng hơn, vừa đảm bảo đầy đủ các chất dinh dưỡng và vệ sinh an toàn thực phẩm.
