Những điều chưa biết về dầu đậu nành

Đậu nành là loại lương thực rất có lợi cho sức khỏe, chống lão hóa và đặc biệt tốt cho hệ tim mạch. Vậy dầu đậu nành được chiết xuất từ các hạt đậu nành có giữ lại được các lợi ích “nguyên bản” này?

Hạt đậu nành chứa đạm dinh dưỡng cao và chất béo bổ dưỡng: 8% nước, 5% chất vô cơ, 15-25% glucose, 15-20% chất béo, 35-45% chất đạm với đủ các loại amino acid cần thiết cùng nhiều sinh tố, khoáng chất.

Chất béo trong đậu nành sẽ được chiết xuất qua ép nóng và tinh chế. Dầu tinh chế sẽ có màu vàng nhạt, không có vị và chứa hơn 60% axit béo đa không bão hoà.

Nguồn cung cấp chất béo không chứa cholesterol lý tưởng

PUFA (chất béo không bão hòa đa) và MUFA (chất béo không bão hòa đơn) là các chất béo tốt không chứa cholesterol, giúp phòng ngừa tình trạng cặn lắng và mảng bám trong thành mạch máu - nguyên nhân gây xơ vữa động mạch và bệnh mạch vành.

Theo TS Nguyễn Lân Đính - chuyên gia dinh dưỡng, một khẩu phần ăn có nhiều axit béo đa không bão hòa (tương quan thích hợp giữa acid béo omega-3 và omega-6) sẽ không chỉ giúp hòa tan và hấp thu một số các vitamin cần thiết cho cơ thể như vitamin A, D, E, K, ...có trong các loại rau quả, hạt; giúp bổ sung năng lượng mà còn có tác dụng dự phòng các bệnh tim mạch đáng kể.

Trên thực tế, nguyên nhân gây tắc nghẽn mạch máu đáng sợ nhất là cholesterol - một loại chất béo chỉ có trong con người và súc vật, hoàn toàn không có ở thực vật. Nhưng ăn chay (không đưa cholesterol từ thức ăn vào cơ thể) cũng chưa hẳn đã giúp loại cholesterol xấu khỏi cơ thể. Bởi có những vị tu hành phân tích máu vẫn thấy hàm lượng Cholesterol cao - đó là do chính cơ thể họ tạo ra (trong gan, mật, để tổng hợp nhiều loại hormon...) chứ không phải do thức ăn.

Tuy nhiên, do cơ thể không tự tổng hợp được các chất béo không bão hòa nên phải lấy vào từ các thực phẩm chúng ta ăn uống hàng ngày trong đó dầu đậu nành là một nguồn cung cấp các chất béo không bão hòa rất lý tưởng và kinh tế vì có đến hơn 80% thành phần là các chất béo tốt (PUFA và MUFA).
