Những hiểu lầm về canh

(Dân trí) - Canh là món ăn không thể thiếu trong mỗi bữa ăn hàng ngày nhưng cùng với đó là rất nhiều hiểu lầm:

Canh xương bổ sung can-xi

“Ăn cái gì bổ cái đó, canh xương bổ sung can-xi”, đây là câu mọi người thường hay nói, nhưng thực tế không phải như vậy. Lượng can-xi ở trong xương có thể dung hòa vào trong canh là rất thấp, 10kg xương hầm lên thành canh thì lượng can-xi còn không đủ 150mg. Có người đã từng làm một cuộc kiểm nghiệm, trong một bát canh xương có khoảng 2-3mg canxi. Nếu tính theo quy tắc mỗi người một ngày cần có 800mg can-xi thì phải cần 300-400 bát canh/ngày mới đáp ứng đủ nhu cầu canxi cho cơ thể.

Ăn thịt không bằng uống nước canh

Mùi vị trong nước canh thông thường ngon hơn vị thịt trong canh, vì thể mọi người hiểu nhầm rằng những “tinh hoa” trong thịt đều chạy vào hết trong canh rồi, cho nên dinh dưỡng trong canh tốt hơn trong thịt, hình thành câu “Ăn thịt không bằng uống nước canh”.

Thực tế mùi vị trong canh hầm lâu là do một số nitơ trong thịt lọt ra ngoài tan vào trong canh, nhưng đa phần protein trong thịt vẫn ở trong trạng thái “tĩnh” mà không tan ở trong nước. Canh mà được hầm từ 2 tiếng trở lên thì hàm lượng protein thịt tan ra cũng chỉ khoảng 5%, tức là 95% dinh dưỡng vẫn còn nguyên trong thịt. Vì vậy, chỉ uống nước canh không ăn thịt chỉ là làm hài lòng cảm giác ngon miệng, còn đại lượng thành phần dinh dưỡng vẫn lưu lại ở trong thịt.

Ai cũng có thể ăn được canh đặc

“Canh càng đặc, dinh dưỡng càng cao” . Trên thực tế thì không phải thế. Xương lợn, thịt gà, thịt vịt vv sau khi hầm lên với nước thì có thể giải phóng hợp chất hữu cơ, kiềm purine và axit amin. Hiển nhiên, canh càng đặc thì các chất này càng nhiều. Tuy nhiên thời gian dài dung nạp quá nhiều purine thì sẽ dẫn đến axit latic tăng cao, đây cũng chính là nguyên nhân dẫn đến bệnh Gout.

Vì vậy, những người mắc bệnh Gout, bệnh tiểu đường thì không nên ăn canh quá đặc, vì nếu dung nạp quá nhiều purine sẽ tăng thêm gánh nặng cho gan và thận, không có lợi khống chế bệnh tiểu đường.

Thời gian hầm canh càng lâu, dinh dưỡng càng nhiều

Rất nhiều người nghĩ rằng canh càng hầm lâu thì dinh dưỡng càng nhiều, vì vậy khi hầm canh thì hầm suốt mấy tiếng đồng hồ. Thực ra, thời gian hầm canh càng lâu thì rất nhiều dinh dưỡng sẽ bị phá hỏng, thời gian hầm lâu protein sẽ biến chất càng nhiều, vitamin cũng bị mất đi nhiều. Canh hầm lâu chỉ hàm chứa lượng protein, chất đường và khoáng chất khiêm tốn vì thế chỉ có thể nói canh này nhiều dinh dưỡng hơn một chút so với nước lọc mà thôi. Vì vậy, hầm canh không nên để thời gian quá lâu, thông thường trong vòng 2 tiếng là thích hợp nhất.
