Các chất béo không sinh cholesterol trong hạnh nhân, các loại hạt sẽ tốt nhất khi không nấu qua lửa hoặc dùng các loại chất béo đa bão hòa như dầu ôliu và dầu hạt nho. Tuy nhiên, caroten trong các loại rau quả màu vàng, đỏ và cam thì lại sẽ phát huy được ưu điểm của chúng khi nấu.

Vì thế, một chế độ ăn tốt nhất là nên phối hợp giữa thực phẩm nấu chín và thực phẩm ăn sống.
